Chocolate Pan Fudge Fondant Method

Needed ingredients:

8 lbs Sugar

2 lbs CornSyrup

3 lbs 20% Cream

0.5 lbs Butter

3 lbs Chocolate Liquor

0.06 lbs Salt

2 lbs Fondant

Directions:

  1. Place the sugar, corn syrup, cream and butter into kettle.
  2. Heat and mix gently for about 10 minutes to make a smooth emulsion.
  3. Boil to 234° Fahrenheit degrees.
  4. Turn heat off, and cool kettle to 150° degrees.
  5. Add salt and chocolate liquor, and mix until 180° degrees.
  6. Cut fondant up into small pieces and mix in.
  7. Mix until smooth and then fill pans, or spread onto cooling table to set.
